CAKE CAKE CAKE
PANCAKES that is! Tuesday February 28th marks Pancake Tuesday and I definitely will be indulging in pancakes for breakfast, lunch and dinner. Pancakes can be very hearty and calorie laden so here is my breakfast go to recipe for some guilt free indulging! Each pancake is approximately 140 calories, don't mind if I eat three lol!
*2 medium bananas
*1/2 cup of almond milk (or regular milk)
*1 cup of flour (feel free to use your flour of choice - key in mind different textured flours will give your pancakes a different look/texture but the taste will still be there!)
*1 tsp of baking powder
*1/2 tsp of baking soda
How To Make
Step 1 - Puree the bananas (mash them with a fork or potato masher if you have one)
Step 2 - Add milk
Step 3 - Add eggs and whisk together
Step 4 - Add all dry incgredients and mix until incorporated, do not over mix.
Step 5 - Heat up a non-stick skillet to medium heat. Don't have a non-stick? Use a little knob of butter.
Step 6 - measure 1/4 cup of batter and add to pan
Step 7 - flip pancake once the visible side starts to bubble. Leave on second side for about a minute.
The batter should make approximately 6 pancakes. Garnish with fresh fruit of choice and 100% maple syrup.
