So I realized maybe not everyone gave up potatoes for lent! What about pasta? It's a common victim of a 40 day boycott! My fave pasta dish is lasagna but this week I decided to experiment with a lasagna-less lasagna. The sub in? Drum roll please ........ Eggplant! Other acceptable substitutes are zucchini, squash and sweet potato. A tip to help these "delicate when soggy" replacements is to grill them! This will also enhance the flavor!
Lasagna not your thing? Maybe you are more of a spaghetti and meatballs type of person. Zucchetti or zucchini noodles are all the rage and can be a very tasty spaghetti alternative. I encourage everyone to invest in a spiralizer to help give that spaghetti look to their noodles. You can easily find them at a Walmart or a home & kitchen store. Once you have spiraled the zucchini I strongly recommend gently squeezing out any water using a paper towel, this will help eliminate sogginess. You can either eat the zucchini raw topped with sauce or lightly tossed in grape seed oil, salt and pepper and sauteed before mixing with sauce. Buon appetito Team Make It Fun NYC
